Balushahi Recipe

INGREDIENTS
Ghee – ¼ cup
Dahi /Curd – ¼ cup
All-purpose flour / Maida – 1 cup
Baking soda – Pinch 
Sugar -1 cup
Water -1/2 cup
Kesar strands 
Cardamom powder – Pinch 
Ghee or Oil for Frying 
Rose petals and Chopped Pistachios for garnishing 
1.Add Ghee and Curd/ Dahi in a blender
2.Blend it 
3. Transfer the mixture to a bowl 
4. Sieve All Purpose Flour, Baking Soda
5. Mix till all ingredients are combined, do not knead 
6.Add 1-2 tbsp water if required to make a soft dough.
7. Cover and let it rest for 15 minutes 
8. In a Pan Add sugar, Water .
9. Stir on slow – Medium Flame
10.Stir till sugar dissolves 
11. Add cardamom powder and Kesar Strands. 
12. Stir and make 1 String consistency sugar syrup.
13. Knead the dough Gently 
14. Knead and make cylindrical roll.
15. Cut equal sized small balls 
16. Roll each ball and make a hole in the middle 
17. Put Balushahi in less hot oil and deep fry on slow flame 
18. Little increase the flame when Balusha starts floating on the top 
19. When it turns golden brown from bottom flip the Balushahi 
20.Deep fry on both sides till golden brown 
21. Dip Balusha in warm Sugar syrup an coat on both sides .
22. Transfer to a plate once completely coated with sugar syrup
23. Garnish with chopped Pistachios , Rose Petals.
