Paneer Butter Masala

Ingredients 

Paneer cubes - 150 grams 
Tomatoes -  3 
Onion        -  1
Green chili   - 1 
Garlic cloves   -  2
Ginger   
Cashew nuts - 10 to 12 pieces 
Bay leaf -1 
Green Cardamom & cloves - 3 each 
Cinnamon stick   - 1 
Water - 2 cups 
Butter - 1 tbsp + 2 tbsp 
Salt - 1 tsp 
Oil -1 tsp 
Red chili powder - 1 tbsp 
Sugar - 1 tsp (optional) 
Crushed kasuri methi - 1/2 tbsp 
Cream - 3 tbsp 

METHOD 
 
1.  In a pan add tomatoes, onion , green chili,  garlic cloves, ginger , cashew nuts   
2. Add bayleaf, Green cardamom, cloves, Cinnamon stick 
3. Add water , butter , salt 
4.Mix & cover with a lid and let it cook for 20 minutes or till veggies becomes soft 
5. Once the veggies are completely cooked, transfer to a bowl and remove the bayleaf. 
6. Let the mixture cool completely 
7. Transfer to a mixer grinder 
8.Grind to a fine paste 
9.Tomato onion puree is ready 
10. In other pan add oil & 2 tbsp butter
11.Add red chili powder & stir 
12. Add tomato onion puree
13 . Cook on medium flame for 5 minutes 
14. Add paneer cubes 
15 . Gently stir and add salt to taste 
16. Cook on medium flame for 2 minutes 
17. Add sugar, crushed kasuri methi & mix 
18 . Switch off the gas and add cream 
19 . Serve hot with chapatis 
20 . Garnish with cream
